Recipe : Stir fry prawns tomatoes

500 g prawns
2 cloves garlic, chopped
2 spring onion, chopped
2 tomatoes, quartered
5 chili padi, deseeded and chopped
2.5 cm piece fresh root ginger, chopped
1 teaspoon sugar
Salt as preferred
Cooking oil

Remove the prawns shell, leaving the tail attached. Cut a slit along the back of each prawn and remove the thin black vein (long black strip). Rinse well.

Blend the garlic, onions, chilies and ginger to a paste.

Heat frying pan, add oil and onion and fry for 2 minutes to soften slightly. Add paste and stir fry for 1 minute to release the flavours/nice smell. Add prawns and after half minutes, add tomatoes and mixing thoroughly, then sprinkle over sugar and salt. Stir fry until prawns turn to reddish colour and completely cooked.
